I've used the cherry chunk mixed 50/50 with the maple chunk for 2 years running in an upright barrel smoker for Thanksgiving turkey. The chunks burn hotter and longer than charcoal and produce a better smoke than just using chips. We have a large family with several kinds of turkeys but my smoked bird is always the crowd favorite.
The cherry used by itself is excellent for doing a whole chicken spatchcock.
