Very delicate with a hint of sweetness. Alder has a cleaner flavor that's smoky, but not peppery, with hints of vanilla. It goes well with sauces that contain bacon or tomatoes. Good with beef, fish, pork, poultry, and light-meat game birds. Traditionally used in the Pacific Northwest to smoke Salmon.

I have been using you apple wood chips to cold smoke my Scottish Salmon for a few years . I decided to try alder chips and was very pleased with the results , slightly sweeter and more complex flavors . I also had great results hot smoking haddock for finnan haddie .
